How video-to-GIF conversion works — illustrated

A GIF is an 8-bit image format: every frame can reference at most 256 colors. Converting video therefore has two jobs. First, frame sampling — ffmpeg trims the clip (-ss start -t duration) and decimates it to a low frame rate (10/15/24 fps) while scaling down to a small width (320/480/640), because both directly multiply the number of pixels you pay for. Second, color quantization: the tool runs palettegen to study all sampled frames and pick the 256 most representative colors, then paletteuse maps every frame to that palette. A two-pass palette dramatically reduces banding and file size compared with a naive global conversion.
